Ingredients
Pizza Filling
- 4 whole wheat pita bread
- 1 tbsp olive oil
- ½ cup each red, green, and yellow bell peppers, loosely chopped
- ½ cup red onion, chopped
- 1 ½ cup button mushrooms, chopped
- ½ tsp each dried OR fresh basil, oregano,and garlic powder
- ⅛ tsp salt
Sauce
- 8 oz tomato paste
- ½ teaspoon each dried OR fresh basil oregano, and garlic powder
Cheese
- ⅓ cup cashews
- 2 tbsp nutritional yeast
- ¼ teaspoon garlic powder
Instructions
- Preheat oven to 425﮲ F.
- Heat a large skillet to medium heat. Add olive oil, onions, and peppers. Season with basil, oregano, garlic powder, and salt. Sauté for 5minutes, add mushrooms and cook for 5-10 minutes until soft.
- Prepare the sauce by adding all ingredients to a large mixing bowl, and stir to combine. Set aside.
- Prepare the parmesan cheese by mixing all ingredients in a food processor or blender.
- Assemble pizzas. Add sauce on top of the pita bread. Add the sautéed vegetables and top each with desired amount of cheese. Transfer pizzas to a parchment-lined baking sheet.
- Place baking sheet on the middle rack in the oven. Bake for 10 minutes until crisp and golden.
