Ingredients
- 1 ¾ lb. sweet potatoes cut into medium chunks
- 3 tbsp capers drained
- 4 celery ribs thinly sliced
- 3 green onions thinly sliced
- ½ red bell pepper small diced
- ½ yellow bell pepper small dice
- ½ orange bell pepper small dice
- ¼ c fresh cilantro chopped
- ¼ c extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp dijon mustard
- 1 tsp crushed garlic
- ground pepper fresh
Instructions
- Add potatoes chunks to a steamer in a medium saucepan. Steam until potatoes are soft. Use a fork to test. Set aside to cool.
- Add capers, celery, onion, bell peppers and cilantro to a large bowl. Add cooled potato chunks to the salad. Stir gently to combine.
- In a separate bowl, whisk oil, vinegar, mustard and garlic until well mixed and slightly thick (the mustard will emulsify the dressing).
- Pour dressing over the potato salad and mix gently. Grind some fresh pepper over top, mix again.
