Ingredients

Pizza Filling

  • 4 whole wheat pita bread
  • 1 tbsp olive oil
  • ½ cup each red, green, and yellow bell peppers, loosely chopped
  • ½ cup red onion, chopped
  • 1 ½ cup button mushrooms, chopped
  • ½ tsp each dried OR fresh basil, oregano,and garlic powder
  • ⅛ tsp salt

Sauce

  • 8 oz tomato paste
  • ½ teaspoon each dried OR fresh basil oregano, and garlic powder

Cheese

  • ⅓ cup cashews
  • 2 tbsp nutritional yeast
  • ¼ teaspoon garlic powder

Instructions

  1. Preheat oven to 425﮲ F.
  2. Heat a large skillet to medium heat. Add olive oil, onions, and peppers. Season with basil, oregano, garlic powder, and salt. Sauté for 5minutes, add mushrooms and cook for 5-10 minutes until soft.
  3. Prepare the sauce by adding all ingredients to a large mixing bowl, and stir to combine. Set aside.
  4. Prepare the parmesan cheese by mixing all ingredients in a food processor or blender.
  5. Assemble pizzas. Add sauce on top of the pita bread. Add the sautéed vegetables and top each with desired amount of cheese. Transfer pizzas to a parchment-lined baking sheet.
  6. Place baking sheet on the middle rack in the oven. Bake for 10 minutes until crisp and golden.
