Ingredients

  • 1 ¾ lb. sweet potatoes cut into medium chunks
  • 3 tbsp capers drained
  • 4 celery ribs thinly sliced
  • 3 green onions thinly sliced
  • ½ red bell pepper small diced
  • ½ yellow bell pepper small dice
  • ½ orange bell pepper small dice
  • ¼ c fresh cilantro chopped
  • ¼ c extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp dijon mustard
  • 1 tsp crushed garlic
  • ground pepper fresh

Instructions

  1. Add potatoes chunks to a steamer in a medium saucepan. Steam until potatoes are soft. Use a fork to test. Set aside to cool.
  2. Add capers, celery, onion, bell peppers and cilantro to a large bowl. Add cooled potato chunks to the salad. Stir gently to combine.
  3. In a separate bowl, whisk oil, vinegar, mustard and garlic until well mixed and slightly thick (the mustard will emulsify the dressing).
  4. Pour dressing over the potato salad and mix gently. Grind some fresh pepper over top, mix again.
  5. Enjoy!
